Viking bread🇩🇰 The bread has just come out the oven and is still pretty hot. It’s a traditional Danish rye bread. Made from rye grain that has been through my mill, and the leavening agent was sourdough. Besides from rye there is sesame and flax seeds and dark Christmas ale in the bread. In Denmark we eat quite a lot of rye bread, and some of us miss it like mad when we are on vacation in foreign lands. When the Viking age arrived, scientists have discovered that the climate had become some degrees hotter in the Nordic countries. As a result the yields of rye went up leading to population growth and the forming of new villages. Perhaps rye bread also played a part when The House of Denmark ruled England from 1013 to 1042 as the stable food of the terrible warriors known as the Vikings😊 I love baking. And I love history.
